Ice cream is usually kept at a temperature lower than -18 degrees Celsius. Due to the presence of fat and cream, and in some cases due to the presence of salt in its structure, ice cream needs a low temperature so that it can maintain its shape and not take on a softened state. Two-stage compressors are usually used to store ice cream in large sizes.
